There are some good climbs in that area - Sripps Poway Parkway, Poway Road, and Highland Valley Road all go from Pomerado Road up to hwy 67. There is also San Pasqual Valley Road that goes from Escondido up to Ramona, though it's a bit narrow in spots. If you're looking for flatter terrain you may have to head toward the coast.

if you go here: http://www.ridelink.org/online_orderform.html you can order a free ridelink map that shows which streets have bike lanes. It's a good starting point for finding good rides.

You could also head north on Pomerado to I-15. Take I-15 to North County Fair exit (don't worry bikes are allow on this stretch). Take a right off the exit and go. This will take you up to Lake Wolhford (good climb). You can follow Lake Wolhford rd until it intersects with ? rd. If you go right it will take you past Harrah Casino.

There is some climbing involved but the traffic is low.
