|I'm up in the Wichita Falls area (about 2.5 hrs north of FTW). If you're here during the summer, there's tons of event rides to do. Online - check out www.lasorsa.net/wmbc/events.htm and www.bicycletexas.com
I've managed to put together a pretty good and varied schedule of road rides for the summer based on both of those lists.
In general, there's lots of farm-to-market roads that are great for road riding, and the clubs here are really active in the summer.
If you're here the last weekend in August, the Hotter 'n Hell Hundred up here in Wichita Falls is the biggest mass start event in TX. About 8k riders last year.
As far as mountain biking, I have to confess that my mtn bike has been transferred into a kiddie trailer-towing machine since I moved here from Alaska last year. I hear that there are some good trails in the DFW area, though. There are some guys in the bike shop at REI (in the Farmers Market area of town off the LBJ freeway: rei.com has the address, I think) that have been helpful with advice. Plus, the local clubs post a lot of info on the bulletin board there.
In the library, "Best Bike Rides: Texas" by Andy White has a bunch of good rides in the DFW area.

Checkout out the ride around Grapevine Lake in Grapevine, TX. This is a suburb of Fort Worth on the NE side very near the airport. I hear it is one of the best in the area for mountain biking.
For road stuff(and mountain stuff)...there is a VERY GOOD bike shop called Bicyles Inc. in Bedford,TX. Go to http://bicyclesinc.com/ for their link. Of course, you can contact them for more good ride info. They have a couple of weekly rides from their shop and are very heavily involved with local events.
