Well I just bought a couple new hubs(chris King rear and Hugi front both 32 hole) I am trying to decide how to build them up for racing. I don't plan on using super-expensive carbon rims but naturally want the lightest possible, practical setup. Please let me know how you would build them up. Ie, what rims/ spokes .
What would you go with Clincher or Tubular. Opinions of each would be welcome. Thanks in advance for your help.

Mavic Open Pro Clincher- reasonbaly light, reasonably priced, easy maintenance (Tubulars should be left to those who really know how to glue)

DT or Wheelsmith 14/15 in back 3 cross. DT or Wheelsmith 15/16 in front 3 cross, radially, whatever floats your boat.

This is my pragmatic set up.

Since these aren't TT wheels, just go with serviceable and durable, and reasonably light. I use the older Mavic Open 4CDs on most of my wheels, and they're no detriment on climbs. For the racer on a reasonable budget, durable counts big, and the Mavics are near bomb-proof. And at 32 spokes, they're going to be plenty strong for any one up to around 220 lbs. The 3x in back is pretty much a must -- leave the more exotic crossings for the techno-driven. Front, well, it's up to you. I've used 3x and radial, and there's really no huge benefit either way. 2x might be a good compromise. And don't bother with alloy nipples, stick with brass (alloy are a little too notch sensitive for my tastes). Make sure to grease the ferrules before inserting the nipple. If you're REALLY into saving weight, you can try using nylon reinforced packing tape instead of rim strips. It works okay, but don't try to go more than half a season without changing it (it gets brittle after a while, then you lose your protection).

Either Mavic Open Pros or Velocity Aeroheads. 3X in the rear, and 2X up front. I've got 3X front and rear on my Open Pros, and they really are bomb proof! The Velocity aeroheads are a nice, durable rim too. I've got two sets of those (one laced to Ultegra hubs, 28 hole; and one set laced to Real hubs, 32 hole). So far, so good.

14/15 spokes will do the job. If you're building them yourself, be mindful you'll get a little bit more spoke windup then with straight gauge spokes.

Just to be specific, I am 5'10" 165 lbs with a good sprint and a tenency to mash big gears. These wheels will only be used for racing and mostly for crits. I have a supportive shop that will be willing to build these and also help in gluing if nessisary. I want these wheels to last around 5 years and beyond that I will probably get some new wheels. I have two sets of training wheels so I won't use these at all for training. Does that make any difference about the rim? What about mavic Reflex?
at 32 spoke would it really matter to use a thicker spoke on the rear than on the front?

I like revolutions (14/17) and alloy nipples for everything but drive side. You have to me more careful building, but it's doable. I have a racing wheelset built on open pro tubulars and they're really really light. At your weight you probably don't have anything to worry about.

Open Pro 32 is fine but there is lighter around. Especially if hills are involved.

Mavic Reflex Tub with your hubs and light spokes will make a light race wheel. Get your shop to balance your weight and wheel use to spoke gauge and count.

Bill Shook also has some light rims 420 and 350g which could make sub 1300g wheels. There is some trade off here though at this weight. Fantastic light wheels for the price

Clincher is easier, tub is best.

Ride or check out as many wheels as you can before committing to anything.

Too many choices really. I have 4 sets of wheels and still want more!

I'm 160 lbs, 6 ft, and I've been racing on Mavic Open Pro CD clinchers, laced with DT revolutions (very thin/light spokes), 32 hole, 3X, brass nipples, DA hubs. I worried that the DT Revo spokes wouldn't hold up, but I've done about 50 races on these wheels with no problems (some of these were road races with rough "Parix-Roubaix" style sections). Of course, it's not just the parts that make the wheel good: I had the local expert build 'em for me.

If you want to try aluminum nipples, I'd still suggest brass for the rear drive side (as another poster already said). I've never tried sew-ups, so I can't make any claim about sew-up vs. clincher.
