I am a newbie. I am considering entering some races this year. I am 37 years old. What is the difference between Cat V and Masters 35+? Which do you enter as a newbie race rookie?

Well, cat V would be slower but more dangerous with everyone being a newbe and probably not having much experience in close quarters as in a race. the masters 35+ will be fast and furious. probably as fast or faster than the cat 3 race, most of them will also race in the pro 1/2/3 races as well.

Since you're new at this, a Masters 35+ would be pretty hard going. While Cat. V makes everyone nervous, the over 30 or over 35 Cat. V races I've been in have been pretty sane. Folks that old tend to have lost their testosterone rush and so are more worried about crashing than the younger crowd. I think this is likely your only choice, unless you're regularly able to get close to 25 minutes in a 10 mile time trial.
