I am looking at a bike with an XTR drivetrain. I would like to go with something like Dura Ace for higher gearing. Is it as simple as swapping bottom brackets and cranksets?

It's going to cost a bunch. If the entire drivetrain is XTR with a long cage rear derailleur, an XTR front derailleur and a wide-spaced 11-32 cassette, you'll have to change the front derailleur in addition to the crank and bottom bracket and you won't like the wide spacing on the cassette either.

Not sure about your question - are you doing this swap on a MTB? If so, and you only want more speed, just swap the cluster - leave the crank and BB alone! Much cheaper/easier!
