Some simple(?) questions....fitTiboy

I just got my new Dean El Diente X-lite frame...went from a 55 to a 54 tt. I saw a post a few weeks ago about a similar question...that is "twitchyness"... This frame is one pound lighter than my last...The front end is twitchy...I would not, at this point, feel confident riding without my hands on the bars...the bike reacts to every move I make...thus when climbing (which it does very well), the slightest movements in my hands/ arms sends the bike way left/ right...I actually have to concentrate and pedal soooo smoothly as not to "flick" the bars. Is this "normal"? can I "adjust" this. And yes, having read prior posts, I understand rake / trail. The HA and STA are 73.

what is your rake/trail on new and old? Stem length? Bar width?

Rake on old...43mm, New 43mm (same fork). Stem 100 old and new... Bar is from old bike....same manufacturer, Dean frame, just a size smaller 56 to 55 and lighter tubes...otherwise a direct swap from one frame to the other. I have other stems to play with, but haven't yet.
