I'm looking at buying a loaded touring bike. Fillet brazed is more sexy, but I don't know the difference in performance between the two. So could anybody describe the advantages/disadvantages between the two. thanks

Either can build a fine frame. I'd be much more interested in the success the builder has had with their method than worrying about which method is used. There is no inherent reason to go with either, though lugs are better in the hands of an incompetent builder.
