i.e....can i take my XT cassette off my Mountain Bike and ue it on my road bike, giving me something like a 39/32 combo?

You might have chain problems.
The chain might be to tight when in the low gear.
Then if you get a longer chain you will need a derailleur with a long cage to take slack out when in a high gear.

...and i was just reading Sheldon Browns article about making custom casettes.....

I may try and put a 30 on an Ultegra 12-25....interesting..

... however if your cassette is larger than 30 teeth you will have to have a MTB rear der on your road bike as well.

yep, but anything over a 27 will need a long cage if you want to have access to all gears.
