for presta, and for the racing bike, lose em. They're only so that the nipple doesn't puncture the tube while it is rolled up.

for schrader. It keeps debris out.

On the other hand, I have left the presta caps on my other bike. I have no good reason except that it already has much heavier tires.
Loose 'em unless your name is Fred............MR_GRUMPY

If you have non-presta valves, your name IS Fred.

I use 'em. They keep debris off of the valve, especially in wet conditions. Besides, why wouldn't you use them? (Sorry, what others think isn't a good reason. And if you're worried about the weight they add to the wheel, well, then I'll roll my eyes skyward now.)

I leave them on to keep the valve clean. I also don't see a reason for not using them. Do you leave the valve retaining nut off too?
yes and no on the valve nutColnagoFE

with my open pros i lose the nut...no need for it. with my cxp33s and standard length valve tubes i almost need it to hold the valve out when pumping up a flat. i usually leave one on the rear wheel in that case.
