Wheel/spoke/hub best combo questionscw05

I'm looking to build my first ever set of wheels and am wondering what the best combo would be. The wheel set would see double duty for light loaded touring and some training on my race bike. I am thinking Mavic MA-3' s for the rims (I don't think the Open Pros would hold up to the touring) with Ultegra hubs and DT 14-15g double butted spokes with brass nipples (32 front and 36 rear). Any suggestions for a first time wheel builder? I've got a copy of Zinn Road Bike Maintenance and Sheldon Brown's article on wheel building. Any suggestions on the spoke selection? Anyone know of any sales on these items currently? Anyone know if it is possible to adapt a Shimano cassette to a Campy hub? Thanks.

Convert any Campagnolo 1999 to current Record, Chorus, Daytona or Centaur rear hub for use with a Shimano 8 or 9 speed cassette. Made by Campagnolo.
