I know quite a bit, but I'd like to know the "in's and out's" of every part of the bike and how to work on them.

I got a old version of bicycling magazine "bicycle maintenance and repair". I thought it helped a lot when I first got into packing wheels and bottom bracket. They have more up to date books on their website.
