I have a mountain bike for mountain biking. Try it some time, its a gas.

I have my full suspension mtb for the off season and to add variety to my riding. A fast descent on the road gets my heart
racing as does going hell bent down an unknown trail.

Even when it is not raining in the Pacific NW the ground is ozing water, or condensation makes the streets wet, so fenders are just something I always have handy till summer. Fenders are not even an option on team training rides, you got to have them or you have to ride by yourself.

We have enough fair-weather days in NC that I rarely ride in the rain. Not worth the hassle cleaning my bike afterwards, and I worry about not being seen by drivers (or not being able to see myself with spotted glasses). So I just go to spin classes when it rains. If I get caught in the rain while riding, I'll generally finish the ride though.
