I've got a pretty good stash of Dura Ace seven speed freewheels and cogs, Mavic MA40 rims, Cinelli bars and stems along with boxes filled with misc old Campy bits and various worn parts removed from bikes long ago or parts bought for bikes that were never built up. I have a ton of mtb tires--tires for specific to conditions I haven't ridden in for years but kept nevertheless. I have a lot of Rockshox parts and random bits of cable housing cut to various lengths. I also have boxes filled with jerseys, shorts and shoes going back 18 years. Basically I have a lot of junk, but I'm not sure anyone would call it a collection.
Noo but, Wanna see my finger/toenail collection? ;-)p nmrwbadley

Is there some kind of 12-step program for dealing with this?

...just what term should one use in referring to an aggregation of bikes? "Peloton" would be logical, but too confusing. "Cluster"? A [bottom] bracket of cycles? A plethora?
