|for instance touring frames crack from pannier weight not riding per say, century/audax bikes from high miles/fatigue.
with respect to sprinting I can only imagine what kind of forces applied to Cippo's bike when he accelerates. The only reason we don't see frames crack under him, 'cause he doesn't keep them long.
Most pro race bike failures I've seen fall either into "stupid light", "let them test it" or results of previous crashes.
In non-pro circut guys who ride 50-80 centuries a year, tour with 80lbs probably more likely to ride frame to death. They are not technofads and don't drop a bike 'cause there's new model out this year.
