whats the difference?

If i had a 11cm Ritchey Pro road stem that I wanted to use on my MTB, would it kill me?

Typically the diameter of the handlebar clamp area is different. You would have to measure the outside diameter of the bar and the inside diameter of the stem’s handlbar clamp to be sure it would work. Otherwise as long as the angle and the length are what you want it should not be a problem. Keep in mind that geometries of road bikes and MTBs are different so an angle that works on the MTB may be to high or low on a road bike.

You may luck out, or you can shim. I've used MB stems successfully on two road bikes, to bring the bars up on a too-small frame and to put mustache bars (which typically use a shorter reach) on another one.
