I remember reading a review of a book that specifically talks about training regimens for cyclists over 50. I thought it was written by Ed Burke, but I can't seem to find it on Amazon or B&N.

Does anyone remember the name of this book?

I think you are looking for "Cycling Past 50" by Joe Friel. Available from www.velogear.com listed at $17.95. Use the index on the site to find the listing for the book.

"Dr. Bob Arnot's Guide to Turning Back the Clock," Little/Brown. Pleased to report that Club helped him edit it and is duly credited, so you can search the credit and guess. Funniest part is him roller blading in Saudi Arabia during the Gulf War. He's a twin turbo pilot and often flies west for a weekend of singletracking, used to ride a Merlin, probably got something pricier by now.
