I am 210 and have been on open pros on record hubs for miles and miles of road and CX - they are bomb-proof.

Just got some Cosmic Eltes on the road - they seem to be really nice and tought too, but a bit to early to tell long term.

See the review section for commments.
My 2 cents...Greg Taylor

You can't go wrong with a set built up from Mavic Open Pro's, upper end Shimano (Ultegra or better) or Campy (Chorus or better) hubset from a good wheel builder. If you don't know anyone local who you trust to build you a set, Colorado Cyclist has a pretty good reputation for its wheels.
