What is the best cycling shoe/ pedal combination to help reduce saddle height???

Not sure what you're trying to achieve. If you want reduced saddle height, why not just lower the saddle?

FWIW, I had to lower my saddle over a cm when I switched from Look to Speedplay, same shoes. The X pedals have a pretty low profile.

Unfortunately they are no longer produced, but Diadora, in the early-mid 90's developed the Power Drive pedal and shoe combination. I used it up until this year, and it had the lowest platform and cleat insertion point I have seen. Its too bad it never took off. I think though now, the Time pedal and shoe combo is about as low as you can get to the pedal.
