I bought a Trek 1100 for touring in '93. I never carried paniers. I road across Missouri four times on it and did RAGBRAI twice. The triple is good for hills but the aluminum frame, even with a steel fork, is stiff.
As far as componets, I don't really remember but they were one step down from 105. As pieces wore out, I upgraded to 105. I do remember that the factory rims from '92 and '93 cracked around the spoke holes. Almost everyone I knew with those wheels needed a replacement within a year so your wheels probably aren't the originals.
I still have the 1100 for a second bike. I have a Trek 5200 now and it is a much better touring bikes. The carbon frame really makes a difference.
