I find that, for temps in the 40s and 50s, a good old run-of-the-mill bandana cuts enough wind and insulates enough but still provides enough ventilation to keep me comfortable. Yeah, it's cotton and we all know about the evils of cotton and sweat, but my head doesn't sweat much so it works for me.

Get a balaclava -- its the best cold weather clothes bang for the buck out there. You don't need to pay $25 for a Pearl Izumi one. REI and other camping stores have them for $8. I prefer the thinner lyrca type ones to the polar fleece ones (too bulky and often too hot). I also wear a cycling cap turned backward outside of it for extra warmth and sweat absorbtion.

I find a lycra backlava works great for almost all cold weather. It fits under my helmet perfectly, and when it's not cold it can be "folded" under my helmet so I don't have the full facemask Darth-Vader thing going on. Pefect for those of us with not much insulation up there anyway...

65 deg and up....helmet alone

45deg to 65 deg.......cycling cap under helmet

25 deg to 45 deg.....balaclava under helmet

under hat over balaclava (no helmet, but if i'm nuts enough to go out in weather like this i've no brain to protect)

Super cold = balaclava. The Pearl ones are good and ~$15 on sale. They are long enough to tuck into the top of a jacket to keep the cold air from spilling down your back/chest.

Kinda cold = wool (or equivalent) cycling cap, preferably one with ear flaps. Kucharik makes a nice reversible wool one with a small brim. Alternatively, you can pick up weird poly-something (definitely something quite synthetic) in grab bins at cycling shops, or in sporting goods stores in Paris.

Not that cold = cycling cap. The brim keeps some of the grime off your face. And if you look around, you can score a cap from wonderfully obscure teams (remember Jolly?)

Quite hot = cycling cap. A cotton hat is not a bad idea in sweltering weather either. At rest stops, run the hat under a faucet and you can cool your brain as you ride.

In really cold weather, I use an older helmet with the pads taken out so that I can fit big dorky hats on (and still keep my noggin protected).

.....that can be picked up from any sporting goods dealer that sells winter/ski wear for like $10 or less.

If it's colder, the oft mentioned balaclava is superb.

I use an Assos Skullcap. It works great and covers my ears without being too bulky under the helmet.

The Pearl Izumi ear band ($10-15) is the way to go for me... It's a two-ply fabric, with a wicking inner and a windproof outer. It's awesome at keeping the breeze out of your ears, and I find that the helmet and some hair is all you really need otherwise... skull caps for me are too warm. I wore the ear band all winter long when I commuted in Boston, and when it was colder than 30, I'd use a windproof helmet cover to block the vents. That suited me well in weather all the way down to 10 degrees.

My preference for (30°-45°) is a thin (smooth on the outside, fleece on the inside) microfleece head band for the ears(not a lot of material 'bunching up'in the head restraint) and just a PI helmet cover (allows my head to 'breathe' and still keep the wind out of the helmet...I would 'cook' in a balaclava; too hot for me)

Down to about 45 all I need is something to keep my bald dome warm. I wear one of those Headsweats coolmax headband/do-rag things. I love 'em, and the red one makes me feel like a pirate.

Colder, windier weather I use a light balaclava from Gekko Gear. It's big enough not to be too tight on my large Irish head, which many "one size" 'clavas aren't. If it's freezing, I add a Polartec headband/earwarmer, still thin enough with the balaclava to go under the helmet.

Here's a different suggestion. I got a clear plastic shower cap from the last hotel I stayed in (the really thin kind). It fits right over my helmet. And keeps your head very warm. Then when it warms up, it stuffs up really small.
