touring gear suggestions...BudhaSlug

I'm planning on starting to do some touring this summer on my single speed/fixed gear cross/touring bike (surly cross check) and was wondering if anyone had suggestions on what gear to get. I'll probably be trying to just use rear rack and panniers (with a reasonably long stem and cowhorn bars, my weight is pretty far forward, so I think that the weighting will be ok), may be getting rained on, and am trying to keep it CHEAP. I guess I need suggestions on:

Panniers
Racks
Tents (1 man)
Sleeping bags (~20deg)
cooking gear
Food
Anything else

REI has a pretty good page for planning for a tour. Needless to say, they recommend their gear, but my experience is that their gear is usually pretty good value. Check it out.

A bed mat is the most important thing. It keeps moisture and cold from soaking through the sleeping bag and the ground even if dry is always cold and the cold always goes through the sleeping bag. A small plastic tarp to cover anything on the rack and bungee cords to hold it down, rope just doesn't work as well over long distances. Also a portable water purifier, you'll always need lots of water, it takes as much space as a water bottle and water purifying tablets taste like ass. Other than that everything is dependant on what you prefer. TTFN
