Straddle Cable angle with XTR cantis and road leversrichpierce

I am building a cross bike and found new, old stock XTR cantis in my box. Sweet looking brakes but they don't have much of an angle to them. Not much cantilever in the cantis, I guess.

What sort of straddle cable angles work best for such brakesets with road (STI) levers? We used to go for 90 degrees on MTBs but I guess the road levers pull less cable?
