Ultegra sti with LX derailleur and XT CranksetMax11

I'm trying to get this setup of Ultegra STI shifters to work with a LX derailleur and XT crankset. I just can't seem to get them shifting correctly. It seems that the sti shifter's don't seem to push the derailleurs out far enough or if I set it for the big chainring it won't drop far enough. Can I make this setup work?

8 speed?
Do you have the correct spindle length on your BB for said crankset?
Do you have the correct derailleur for the chainrings you are running (i.e. std vs. compact)?
Triple or double chainrings on the XT?
These are just off the top of my head?

Road levers don't pull enough cable to work well with mountain derailleurs on a triple, especially the 9sp models. (I had an RSX triple STI lever that worked flawlessly with an LX mech; the old stuff really was better...)

You can try routing the cable to the inner side of the fixing bolt on the derailleur to increase the leverage a bit to see if that helps.
