I found some Deore LX cantis in the odd bin at my LBS
Would these work with my Ultegra levers on my cross bike and if yes would they work as well as let's say Avid shorties

Do you have Ultegra Sti or the Aero levers? I have heard complaints from those using them with 9-spd STI. I used them with 8-spd Shimano 600 for STI and they were fine. I am also using them with Dia-Compe Blaze levers and they work well. I can adjust out any squeal (the primary knock on the avids) and they stop as well as I need for CX racing. I have had some dicey trail situations with them, but then everyone around me was riding full suspension rigs with discs. . .

I think the key is the brake pads. The Ritchey Logicsm red or black, have served me well. Right now, between me and my wife, we have three pairs of these brake/pad combos dialed in.

I have last generation XT cantilevers which are practically the same. They work great once you switch out the pads. Better than the Avid brakes.
