Quick stupid question....speed-chump

I'm building up a Surly Cross Check into a single speed,
light MTB / commuter / fixed trainer / whatever, but I'm
new to the whole fat-tired 700c thing.

Will 700x35's go on CXP-33's? I've seen one reference
on a website that indicated it might not work. What
do you guys think? Do ya'll just run regular road rims,
or are there "cyclocross" rims?

I Don`t see why 35`s wouldn`t fit. I have Matrix ISO3 rims with a 19mm width and can run 35mm tires without any problems. You shouldn`t have any problems.

Yep. Most any 700 clincher tire will fit on any 700 clincher road rim, knobular or otherwise, at least in my humble experience. I've run 30 and 35 mm Ritcheys, and 28mm Vredesteins on my CXP21s (knobies of course).
