has anyone ever heard of "Mafac" brakes, and are they any good?

They were THE gold standard back in the day. Not made anymore, but Spookys and Froglegs are based on the same design (non-low profile cantilever, ie, they stick way out). You can still find 'em now and then on Ebay.

DO THE SPOOKY'S AND THE FROGLEGS WORK BETTER THEN THE AVIDS? IS THERE A HEEL CLEARENCE PROBLEM?

Yes. Avid's have an annoying tendency to squeel. Changing the pads certainly helps but not always.

I've never had heel clearance problems with the Empella's on my Colnago. The Shimano low profile cantilevers (late model XT/LX/XTR) also work great and have greater heel clearance.

I, too, was plagued by the classic Avid squeal; they always stopped well, but they were audible a 1/4 mile away. Turned out it wasn't the Avids--the XT cantis I replaced them with did the same thing. After a few months, I zeroed in on two contributing factors--flex in the fork and too-long brake posts. The worst offender I encountered was a Jake the Snake; the brake posts projected about 1/64" beyond the cantilever arms, enough to make the brakes really sloppy and introduce resonance. Some extremely thin brass shims (two slipped over each post, between the canti arm and the bolt head) eliminated most of the squeal, and a brake booster took care of the rest.
