I've just been invited to attend the local clubs cyclocross course, owever, I don't have a cross bike. I have an OK mt bike, and a Bianchi Giro w/ a tripple for the road. My question is this - Can I convert my Giro to a cross bike??

I have seen people do it before, the only thing you really have to do is get some cross tires, but due to the tight clearances of a road bike you will have to use some very thin ones. I have seen people do this using Vittoria Master Crosses. Also relise that if the course is muddy you are pretty much screwed, mud will get all cloged up under you brake bridge and in your bottom bracket area. I would recomend using the MT bike, put some thin tires on it, like an IRC Notos in a 1.7 and run them at 60 to 70 psi. Folks on cross bikes will have a bit of an advantage on you depending on the course but you can still be competitive. I did this you two years and had a blast. Good luck.
