Are these pedals somehow "undesirable" for cross? I'm considering changing from my SPD's because of their anchor-like weight, but I am wondering why no one talks about these pedals. Does the float prevent one from dismounting properly?

Its more the problem with mud. Speedplays can be tough to get into in the mud. To bad because I really like their road pedals, but a friend who tried the frogs hated them. I use the Time Atac now, switching from SPD's. The time pedals are the choice for most crossr's.

second bada's advice re the TIME ATAC's - don't know much about the frogs - but know that even peanutbutter mud doesn't stop me from clicking in to the TIME's everytime

I personally LOVE the frogs on my MB but find that the amount of lateral float is too much for me to rise out of my seat and crank for any prolonged period of time - my heels are flying all over the place. I do think they rock for getting in and out of in a snap.
