i may build up an Allez pro frame with new ultegra components and easton bar/stem. this would be my first buildup and i was wondering what other shop supplies or small items i may need that do not come with the components normally. as in end crimps, cable housings, end caps,...???

Use grease or anti seize on all threads. Cables and housing for deraileurs and brakes should come with the STI units as well as the housing end caps. The cable end crimps might, but aquire 4 just in case. A roll of electrical tape is handy for positioning the cables onto the bar, and then to terminate the bar tape. Other than a headset press, bottom bracket tool, cog lock-ring tool and cable/housing cutter, a complete metric allen key set (4mm [water bottle cages], 5mm [most parts and cables], 6mm [post's saddle clamp?], 8mm [crank bolts])and a #1 Philips screwdriver [deraileur limit screws, brake centering screws] will do the rest. A torque wrench is highly recommended, especially if you haven't developed a tightness feel yet. A bit too much torque can easily ruin a part.
