I think i'd get to use more of my 12-27 cassette if i made the change. Anyone done this?

I run a 48/38/24 triple on all of my bikes. In fact, we have five bikes in our household, all of which have that front combination. My randonizing bike has the 12-27 Ultegra cassette on the rear. It's a great combination.

Me, too--probably best change I ever madecory

I'm using a 46-36-26, and I can't believe I rode for so long with the "standard" 53-39. I've talked two friends into switching, too, and they love it.
Realistically, I never needed a 53t chainring. The setup I have now (11-28 in back) gives me one or two higher gears than I usually need, a bunch more usable ones, and I can often power over hills I used to have to shift down for. When I'm in shape, I don't use the granny much, but it doesn't hurt anything to have it there if I need it. I can't think of any change I've made that's increased my enjoyment of cycling as much.
I run 50/39 with 12/27 and its greatnoupi

When downshifting from the 50 Ijust go down 1 or 2 in the back to be still in the zone.
39 to 50 is much easier than 39 to 53
