my first road bike... need help!okram21

I'd like to buy myself a road bike. I have read that
1. shimano 105 is quite as good as ultegra in functionality and weight.
2. aero wheels with few aero spokes and aero rim let me ride pretty much faster than a standard 32 spokes wheelset with round spokes.

I now ride a steel mtb frame (breezer lightning) with very narrow slick tires. That bikes starts wobbling (spelling?) very quickly which scares me. So I asked myself if that is a problem on road bikes too. Does it depend on frame torstion stiffness? My steel mtb frame is very flexy!

Can a 1090g scandium frame be stiff?

Is it possible to use a shimano xt 11-32 9spd cassette on a road bike with dual crankset? Gear ratio 42-32 is exactly the same as gear ratio 30-23! Will the gear increments be too big?

what frame size will fit me at a body height of 179cm.

what stem lenghs are standard?

are shimano pedals a good choice?

b A bit, but fewer spokes means a ride home in a car if one breaks.
