Is there any significant difference between bars made out of 6061 aluminum and 7051 aluminum? If so, what is it? Salsa makes bars out of both and the 7xxx series is much more expensive.

The two alloys have the same stiffness, but the higher alloy can be made a little thinner and is a little more brittle. Since it can be thinner, it can be lighter. Since it is more brittle, it is harder to work with. Likely there are more differences in the bars than just the alloy, thus explaining the difference by much more than just the cost of the aluminum and the fabrication process.
