|Pedals - What are the best bets?||TwoBikes|

|I started riding again last season after about 12 years of doing other activities. I am in the process of purchasing a new bike as I had so much fun last year.
The component groupo's haven't changed that much since my last bike purchase (although my Shimano 600 bike back then cost $500, now an Ultegra bike will cost 3X's that much). However, I still used toe-clips back then and now everything is clipless.
But, I don't know the first thing about clipless pedals, except for the fact that there are tons of options out there. What are the best buys? Value buys? Look was the only game in town in 1990, so...
Are there any recessed-shoe compatible pedals? I liked to be somewhat educated before I go to my LBS.
Also, some context... I am not a long-distance rider. I probably right about 15 miles 3 - 4 times per week. Did a handful of triathlons and duathlons last year and will probably do another 6-10 this summer.
Any help would be greatly appreciated
