I recently bought a 3t forgie stem for my bike that has a profile bsc fork with carbon steerer. When I went to the LBS to get a 1in adapter, the guy said he's heard that one bolt clamps don't work well with carbon steerers. They apparently "pinches" the steerer. Anyone heard of or had this problem?

That could happen if you over-tighten the bolt but if you tighten to the appropriate torque settings, you'll be fine. That being said, I don't have a torque wrench but have yet to have a problem. I just tighten by feel and am careful not to over do it.

My new Litespeed came with a Forgie mounted on a carbon steerer. I'm replacing the Forgie with the ZeppXL because I'm going with an OS bar but you should be fine.

I have a 3T Forgie stem on a 1" Ouzo Pro carbon steerer and have had no problems at all.
