I have an Ultegra rear cassette, 1 1/2 years old with about 6500 miles. How can you tell when they need to be replaced?

A new chain will skip in the gears that you use most.

You often can visually see the worn teeth on your high use cogs. You'll see a "shark fin" look to the tooth. As SW said, the jumping chain is a dead give away. Have a new cog set on hand, install a new chain, and stand up in a few gears. You'll know right away. In all likelihood, an Ultegra unit with 6500 miles on it should be replaced.
