Campy Veloce, what is it equivalent in Shimano's line up?

Probably closest to 105. Veloce is slightly less expensive than 105 and a bit heavier. You can find some comparison data at cbike.com

Totally personal opinion - I am not trying to start an argument.

105 = Veloce
Ultegra = Centaur (used to be Daytona)
Dura Ace = Chorus
? = Record

And, by the way, I've used a mix of Veloce, Centaur, Chorus, and Record components over the years and they all work well. I also know a Cat 2 who used to race with 105 so that speaks pretty well for the Shimano quality as well.
