If I go from a -10 degree rise 120mm stem to a 0 degree 120mm stem, how much higher will the bars be and how will my reach be affected?

...if you paid attention in geometry class, but I didn't. Wouldn't be much, though. You can probably eyeball it within a couple of millimeters--just stand off to the side, look at the thing and imagine it poking out at 90 degrees to the headtube instead of down 10.

Grab a calculator. Take the SIN of the angle (relative to horizontal) and multiply by stem length

I thought I read you were going to +10deg. -10 to 0 deg in 12cm gets you 2 cm.
