Wheel building question....sprockets

I have some rims where the nipple holes are alternately offset. I am told that the holes to the right side should be laced to the right side of the hub and the left side holes should be laced to the left side. Here is my question: if it is considered desirable to have your spokes not be very vertical-hence the worry that drive side "dish" is too shallow-why not use the alterate holes in the other fashion: the ones on the left laced to the right, and vice versa. This would make the spokes less vertical on both sides. Am I on the wrong track here? Thanks for your reasonable comments.

I have seen that done and it puts a real nasty bend in the spokes as they leave the nipple. The nipple seats are aimed at the flanges of the hub not the center of the hub.
