I'm wondering if Open pros with 105 hubs with 34-36 spokes perform better than the Shimano wheelsets. I've heard that the Open Pro/105 wheels are lighter than the shimano wheelsets. Is this true?

I have Open Pro's with Ultegra hubs. Don't know if they're liter or not, but they are the best budget racers on the market for the money and cost. Its the rotation weight that you need to look into. Like the weight of the "Rim" make sure they have Alloy Nipples, not brass. Anyway, just my two cents worth.

If you just want the "flash" factor then go with the Shimano paired spoke wheel. I'd go with the DA/Open Pro. Presently using a Mavic Cosmic Equipe and they are not lightweights. But they're nice for TT if you get the speed up they stay up. Glenn is right with the rotation weight. So think about what you're going to use them for. Still alot of bad roads there or have they paved them already?..Good luck!
