No problem, the spacing is the same and limit screws will prevent it from shifting too far.

Shimano 7 speed spacing is 5.0mm and 8 speed is 4.8mm. Close, but not the same. That said, your 8 speed 105 levers will usually shift a 7 speed cogset ok with a bit of fiddling.Others arent so keen on this concept, but it does work.
empirical evidence says it works fineclub

I've made 8 sp. cogsets using loose cogs and 7 sp. spacers and it woiks fine, using Gripshift, and old 7 sp. Xt thumbies, employing the phantom click. Got a 7 sp. cogset on my crosser with 8 sp. bar-end index shifters, just not using the last click, and it woiks fine. I've got a road bike with a 6 sp. cassette using 7 sp. spacers and it woiks fine with 8 sp. downtube index shifters, and a SunTour rear derailleur. Never had a problem using 7 sp. spacers and loose cogs with 8 sp. shifters of any kind.
